Vegan Mac and Cheese with Squash

how to make

  • Cook macaroni according to packaging instructions
  • In large pan, sauté onion in olive oil
  • Add squash, vegetable stock and season with salt and pepper
  • Cover and cook until squash is soft
  • Add vegetable milk, mustard, nutritional yeast and 2/3 cup of Nurishh Cheddar&Mozzarella Style Shreds, season and mix well
  • Stir in cooked macaroni and heat for a few minutes
  • Pour into a gratin dish and cover with remaining Nurishh Cheddar&Mozzarella Style Shreds and breadcrumbs

finishing touches

  • Brown under boiler
  • Garnish with fresh chopped parsley
  • Serve and enjoy

  • 2 1/4 cups of whole wheat macaroni noodles
  • 1 onion, chopped
  • 2 tbsp. olive oil
  • 2 cups of ambercup or butternut squash, diced
  • 5 ounces of vegetable stock
  • 10 ounces of plant-based milk
  • 1 tsp. brown mustard
  • 2 tbsp. nutritional yeast
  • 2 cups Nurishh Cheddar&Mozzarella Style Shreds
  • Salt and pepper to taste
